Got my good luck chow on early with a trip New Year's Eve to Faye's BBQ in Sylacauga. However, the collard greens, black eyed peas, and chopped barbecue pork played supporting roles to my heaping helping of fried and boiled chitlins. Or, as Miss Faye correctly calls them on her menu, "chitterlings."
Confession: I didn't finish the chitlins. If you've had them, you know a little goes a long way. But if you haven't, slide off Hwy 280 the next time you're south of Birmingham, and give them a try.
